Oatmeal Peanut Butter Cookies



It’s been really hot here in the Seattle area, so it was hard to find something to bake for this week. I didn’t really want to turn my oven on at all, but I figured that the house was already over 85 degrees, so what’s a little more heat? I sure wish I had air conditioning!

I ended up selecting a homey cookie that I found on All Recipes. This is one of All Recipe’s top 20 cookie recipes, and the original recipe also has you make a filling to make sandwich cookies. Since I always take my cookies to work, I decided to not make the sandwiches since there would be so few. They taste pretty good as they are, so I figured I could just leave them as is.

These are basically a peanut butter cookie with some oats added to the dough. The recipe on All Recipes says that they are similar to Girl Scout Cookies. I’m not sure about that, but they have a good peanut butter flavor. They are crisp but still have a nice chewiness. I like these a lot and I think that I will make them again and make the filling and sandwich them together.

3/4 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon baking powder

1/2 teaspoon salt

1/2 cup butter, softened

1/2 cup peanut butter

1/2 cup sugar

1/2 cup packed light brown sugar

1 teaspoon vanilla extract

1 egg

1 cup quick cooking oats


Preheat the oven to 350 degrees. Line baking sheets with silicone baking mats. In a small bowl, combine flour, baking soda, baking powder, and salt, set aside.

In a large mixer bowl, cream together butter, peanut butter, sugar, brown sugar, and vanilla. Add egg and beat well. Stir in the flour mixture and then stir in the oats.

Drop by teaspoons onto baking sheet, and press each mound down with a fork to form 1/4 inch thick cookies. Bake for about 8 minutes, or until cookies are a light brown.

Oh Sweet Daughter-in-law of mine, you have now gotten my attention with these Oatmeal Peanunt Butter Cookies. Jeanne doesn't like Oatmeal and Rasin cookies, so I am going to make these for her. I can't thank you enough for sharing all these recipes with me.....I have gained 30 pounds and gone through a roll of paper towels just reviewing your recipes.
