For this round of the recipe swap, it’s Blogger’s Choice! I
received the blog A Seasoned Greeting
and I got to choose anything from her blog. I love the
Blogger’s Choice swaps but it’s usually pretty hard to decide what to make. I
don’t usually pick cookies or other desserts as the swaps are a way for me to
expand my horizons. This round was close, as I almost made the Coffee and Nutella Chocolate Cupcakes. Maybe another day.
I ended up buying the ingredients for two different dinner
recipes and ended up making these: Pepperoni Puffs. My husband loves pepperoni
pizza and I figured he would love these. They are so simple to put together
that I actually made them and my husband hadn’t even realized I was making
dinner! I thought about making them in regular muffin pans, since I knew we
were having these for dinner rather than an appetizer, but I kept them small. I
ended up making 20 puffs.
Like I said, these are so simple to make. Just one bowl and
one cutting board, too, so not too many dishes. I tried to rush these, taking
them out of the pan as soon as they came out of the oven, but you do need to
let them cool for a couple of minutes. I thought that they would be terribly
stuck, but came out of the pan with no problem after a couple of minutes. You’d
never guess that these puffs aren’t all that bad for you, they sure are tasty.

Pepperoni Puffs
3/4 cup flour
3/4 teaspoon baking powder
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
3/4 cup milk
1 egg, lightly beaten
1 cup shredded mozzarella cheese
1 cup diced turkey pepperoni
1/2 cup pizza or pasta sauce
2 teaspoons dried basil, or 2 tablespoons fresh
Preheat oven to 375 degrees. Grease a mini muffin pan
with 24 cups.
In a large bowl, combine the flour, baking powder,
oregano, and garlic powder; whisk in the milk and egg. Stir in the mozzarella
and pepperoni; let stand for 10 minutes.
Stir the batter and divide among the mini-muffin cups.
Bake for 20-24 minutes, until lightly golden.
Warm the pizza or pasta sauce and stir in half of the
basil. Sprinkle the puffs with the remaining basil.

Oooh I made these before when I saw them on Nicole @ PreventionRD's blog. I made them for a friend that recently had a baby. It freezes well and then can be nuked for a quick one-handed lunch. My husband was the taste tester and loved them so much that he was sad to see them go!
