Toffee Almond Magic Cookie Bars



When I pick cookies to make for my Friday cookie posts, I try to pick something really great, and often, something a little different. But sometimes the cookies that get the best reception and the classic cookies. This cookie is a variation on a Seven Layer or Magic Cookie Bar. Last week on my chat list’s recipe swap, Jenni posted this recipe and I knew I had to make it right away. She had got the recipe from Kate and it’s such a winner.

I am often afraid of cookies made with sweetened condensed milk. They can be so sweet that your teeth hurt! I remember one Christmas when I was a kid there was a magazine insert with recipes using sweetened condensed milk. We made a few of those recipes that Christmas and I just remember they were great but oh so sweet. I think I have made one of those recipes since, the Hidden Cherry Cookies that I made for my (now) husband’s birthday. (He proposed that day, over 10 years ago, but I’ll never forget that day!)

I’m not going to deny it, these are sweet, but there are so many flavors that the sweetness is balanced. These are like crack, once you eat one you want to eat more and more. You can mix up the toppings, I had both chocolate toffee bits and plain toffee bits, but I used the chocolate toffee. I would maybe add more almonds next time, but I really like almonds. These cookies are a classic, and they are classic because they are so good. Thanks Jenni and Kate for such a great recipe.

Toffee Almond Magic Cookie Bars
9 rectangular graham crackers
4 tablespoons unsalted butter, melted
1 can sweetened condensed milk
1/2 cup chocolate chips
1 cup Heath milk chocolate toffee bits
1/2 cup sliced almonds

Preheat oven to 350°F. Line a 9×13″ pan with foil and spray the foil with cooking spray.

In a food processor, process the graham crackers to make crumb. Add the melted butter and process until the crumbs come together. Press the crumbs evenly into the prepared pan.

Pour the sweetened condensed milk evenly over the graham cracker layer. Sprinkle the chocolate chips, toffee bits, and almonds over the sweetened condensed milk. Press down to set the add ins.

Bake for 30 minutes, until browned. The bars may seem unset, but will set as they cool. Allow to cool completely before cutting.

Lift the foil from the pan and place the bars on a cutting board. Peel away the foil and then cut into bars.

I'm so glad you liked these! I'm making at least a pan a week now... It's kind of a problem :(
