Oreo Cookie Bars


I’ve been off this week, so I had more time to bake than usual. The weather has been ok, even a bit on the cool side when we have afternoon thunderstorms. Thunderstorms are uncommon here, and while the kitties are big fans, I don’t mind them at all. Here there aren’t dangerous at all, so there really is nothing to worry about.

As I am not working this week, I don’t have my regular audience to take my baking to. I wanted to make some cookies for my husband’s coworkers, but I figured that I could make a smaller batch if need be. I looked at different recipes and I ended up picking these Oreo bars, as I knew the extra Oreos would be appreciated by my husband. The bars did make a smaller batch, and they only lasted a day when my husband took them to work.

This recipe isn’t too hard to make, but it isn’t the easiest. There isn’t a lot of dough, and then you split it in halves and put a filling in the bars. The bottom half wasn’t too bad, and then you top them with chips, Oreos and condensed milk. The trick is topping the bars. You can’t spread this dough, it’s too thick. I took little pieces of dough, flattened it, and then pieced it on top of the bars. This worked the best, but you still need to spread the dough a bit. I tried this with slightly damp hands, and that worked well. Baked up, these bars taste like brownies with some excellent mix-ins. I liked them a lot, even the edges that I ate. Again, they were a success with my husband’s coworkers, and I’m really glad they liked them as I don’t bake for them very often.


Oreo Cookie Bars

1/3 cup cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups flour
1/2 cup butter, room temperature
1/4 cup sugar
2/3 cup packed brown sugar
1 teaspoon vanilla
1 egg
1/2 cup white chocolate chips
6 Oreos, chopped
1/2 cup sweetened condensed milk

Preheat oven to 350 degrees. Line a 9” square pan with foil and spray the foil with nonstick cooking spray.

In a medium bowl, whisk together cocoa powder, baking soda, salt, and flour. Set aside. In a large mixer bowl, beat the butter, sugar, and brown sugar on medium until smooth. Stir in the vanilla and egg. With the mixer running on low, gradually add the flour mixture, stirring until combined.

Spread half of the batter into the prepared pan. Sprinkle with the white chocolate chips and chopped Oreos. Drizzle with the sweetened condensed milk. Carefully top with the remaining dough, covering the filling as much as possible.

Bake for 28-30 minutes, until the bars look dry. Allow the cookies to cool before cutting into bars.
